The Piedmontese cow is a special breed from Italy, known for a genetic trait that produces a particularly short muscle fiber. The result is beef that is exceptionally tender without aging or marbling. This is a lean beef that would grade near USDA Choice. These cows are raised on pastures in Nebraska with grain given as a supplemental feed source. This would have been the original beef used in classic Italian dishes like carpaccio and tartar.
