This is just the endosperm of the durum berry with a fancy name. Or you can think of it as Semolina milled down to flour. We mill this product to a very fine granulation which makes absorbtion consistant and your pasta silky smooth. This product also works very well in bread formulas that call for Semolina. Like with pasta, in your bread formulas, Extra Fancy Durum hydrates consistantly and tends to be thirstier so you can bump your hydration which will open your crumb up. It lives up to its name.
