Popular in southern Italy, Passata is that secret ingredient coveted by many Italians as a “ready to use” sauce base. San Marzano tomatoes are milled and strained to remove all seeds and skins, leaving a smooth and light tomato puree. Our passata is different from standard domestic tomato puree because of its natural and light tomato taste, and absence of additives like citric acid and salt. Stir in with wine or cream when deglazing to create a rich sauce for over chicken or fish. Excellent as a soup base, or enjoy as a Bloody Mary mix.
