A tree-sprouting mushroom, this fungus is known as “Hen-of-the-woods” or the “Ram’s Head” in western cultures. Maitake means “dancing mushroom,” and has a woody, savory flavor. Traditionally favored in various broths, it has a place in Eastern medicine, being used to promote liver health.
Maitake mushrooms add a distinctively rich flavor to egg dishes, tempura, pasta sauces, soups, and stews. Similar to shiitake mushrooms, they are delicious paired with chicken.
