About Charlito’s Cocina
Charlito’s Cocina began in 2011, inspired by a desire to celebrate the food preservation tradition of curing, as well as the goal of making high quality cured foods more accessible. Specializing in dry cured salami, our products are simple and made with the best ingredients we can find, with technique that has survived and evolved through generations. All the meat we use comes from the cleanest, most sustainable purveyors we can find. The salt we use is traditionally harvested, solar evaporated, unrefined sea salt. While our products are, no doubt, influenced by Southern European curing traditions, we are proud to be a part of the diverse and inspiring American gastronomic landscape. With this spirit in mind, we strive, one product at a time, to distinguish a style that is uniquely our own.
