We will make a pre-hispanic Mexican atole recipe made with heirloom blue masa, flavored with vanilla and cocoa nibs and sweetened with delicious brown sugar.

Atole is dairy free, naturally gluten free and full of fiber an excellent nutrients to get your day started.

We will enjoy this delicious warm drink with fresh churros.

About the Workshop

Mole is the mother of all Mexican sauces, its complexity in preparation is a technique worth learning and sharing.

Mole is more than blend of dry chiles, spices, fruits and seasonings, it is a sauce full of tradition carried over through many generations. While all Moles taste different, since every family has their own regional variety, during this mouthwatering workshop we will be making a Oaxaca-inspired recipe. We will serve our Mole with Mary’s free range organic chicken and fresh heirloom corn organic tortillas.

About the Workshop

Molca-what? You may ask. A molcajete (mall-ka-he-teh), is a mortar and pestle made with volcanic rock. It is traditionally used to make salsas and guacamole. While food processors and blenders are of great convenience, they cannot replicate the vibrant essence a molcajete can achieve. Of course with a bit of elbow grease and the proper technique.

Molcajetes are known to “season” (much like cast iron skillets), carrying over flavors from one preparation to another.

By the end of this fun workshop you will be able to:

– Create 3 heirloom salsa recipes: Charred Salsa Roja, Salsa Verde Cruda (3 ways), and Peanut Salsa

– Properly cure a molcajete

– Understand the science behind the explosions of flavors
