The name Aleppo comes from an old city along the Silk Road in Syria. Once Aleppo peppers are ripe they are slightly dried, seeded, then crushed or coarsely ground. Some salt is used in the drying process. Aleppo pepper flakes are mild when compared to most crushed pepper containing seeds. This allow much more of the pepper's flavor to be tasted. The flavor is tomato like with hints of dried fruit and ends with a pleasant level of heat.
