Vanilla beans grow on a type of orchid vine. They were first introduced to Europe in the 1520's but not cultivated until 1841. There are two primary species. Vanilla tahitiensis is native to Tahiti and also grown in Papau New Guinea. Vanilla planifolia is native to Mexico and is also grown in Madagascar(Bourbon), and India. Most beans are dried to 18% moisture to avoid growing mold. The beans from Tahiti are naturally immune to mold and therefore can be left with 45% moisture. Our friend and supplier Manuata Martin is Tahitian and his brother grows our Tahitian Vanilla Beans. Manuata has an appreciation for vanilla from all origins and imports the very best for us.
