From the Phoenix Mountain in Guandong Province, Phoenix Dan Chun starts with a supreme grade called golden yellow branch type (GYBT). The yellowish tea bushes are handpicked at an elevation of 4200 feet, where the soil, moisture, and the amount of sun give the plant its character. The leaves are rolled lengthwise to cause a partial fermentation. The taste is sweet and brisk.
