Fresh Summer Truffles are appreciated all over the the world for their delicate earthy flavor. Picking season is from May to September. Summer truffles are usually found in limestone terrains, oakwoods, and pinewoods. They are grown in Spain, France, Italy, China, and the USA. We currently import them from Europe.
Use: This is a mild species, and you should plan to use around 1oz per serving. Use Summer Truffles with truffle oil or truffle butter to boost their flavor, or prepare them with little adornment. One of our favorite ways to enjoy fresh Summer Truffles is to use a micro-grater or truffle shaver to build a mound on top of grilled toast. Then, drizzle with your best extra virgin olive oil, may we suggest Trevi, and finish with a sprinkle of Omnivore Salt. When using any Truffle, be generous for the best experience. The taxonomic name for Summer Truffles is Tuber Aestivum Vitt. Relative to the White Winter Truffle all Black Truffles are newcomers on the evolutionary stage. White Truffles lack a protective skin called a gleba, making them susceptible to drought and pest such as Truffle flies. This means species of White Truffles are often constrained to tight geographic locations and have thus far eluded commercial cultivation. Black Truffles have evolved to have a protective gleba with a hard polygonal texture that keeps moisture in and bugs out. This skin has allowed species of Black Truffles to grow naturally throughout a larger range and to be cultivated around the world.
